But is their a lazy way to make bubble and squeak?
Yes, of course there is. Get a pound bag of diced orange rutabaga from a farmers market or rural grocery. Get a bag of coleslaw shredded cabbage, and a bag of frozen hash brown potatoes, diced or shredded. Also get a small bag of frozen diced white onion. Go home and dump all these bags in a pot. Add a teaspoon of salt and a tablespoon of brown sugar. Demerara or something. Add lots of water, put a lid on the pot and boil the heck out it for about two hours. When everything seems very cooked, remove from heat and strain with a sieve or something. Once most of the water is removed, put the stuff in a large skillet with a bit of olive oil or something. Simmer at very low heat, mash if you want. When the stuff has reduced and slightly fried, plate and serve with black pepper and butter or whatever.
